Banana Honey Cake

For a standard loaf tin.

Ingredients:

Bananas – 450g
Self Raising flour – 225g
Salt – 1/2tsp
Nutmeg – 1/4tsp
Butter – 125g
Sugar – 80g
Lemon zest – 1
Eggs – 2
Honey – 120g

Instructions:

Pre-heat oven to 170 degrees C Fan.

Peel and mash the bananas.

Beat together the flour, salt, nutmeg and butter. Add the sugar, lemon zest, eggs and honey.

Bake for 1h 15mins.
