Chorizo, Bean & Bulgar Bake

Ingredients:

Chorizo (chopped) – 250g
Black beans – 1 can
Dates (chopped) – 100g
Onion (red, chopped into half rings) – 1
Cherry tomatoes (pricked with a knife) – 400g
Bulgar wheat – 200g
Water (boiled) – 400g

Instructions:

Preheat oven to 180 C Fan.

Put everything except the bulgar wheat and water into a large baking tray. Bake for 30 mins.

Add the bulgar wheat and boiled hot water. Stir through, cover in foil, and bake for a further 30 mins.

Serve with Tzatziki
