Italian Apple Charlotte Cake

For a 27cm springform cake tin. Serve with cream. Can be made with pears.

Ingredients:

Apples – 1kg
Egg Yolks – 3
Sugar – 140g
Butter (melted) – 40g
Milk – 190ml
Vanilla essence – 1tsp
Self Raising Flour – 270g
Baking Powder – 1tsp

Instructions:

Place a sheet of baking paper into the base of the cake tin. Grease the sides with butter and dust with flour.

Preheat fan oven to 160 degrees C.

Peel and chop the apples into medium cubes.

Whisk the egg yolks with sugar until pale and fluffy. Whisk in the melted butter. Whisk in the milk. Mix in the vanilla essence.

Mix in the flour and baking powder. Do not overmix to keep the batter light.

Mix in the chopped apples and pour into the baking tin.

Bake for 45 mins.
