Gooseberry Chutney

Ingredients as a measure

Gooseberry – 700g
Red Onion – 350g
Dates – 280g
Light brown sugar – 175g
Cider vinegar – 350ml
Salt – 2tsp
Ginger – 1tbsp
Mustard seeds – 2tsp

Ingredients as a proportion

Gooseberry = Constant
Onions =gooseberry * 0.5
Dates = gooseberry / 2.5
Sugar = gooseberry / 4
Vinegar = gooseberry / 2
Salt = Vinegar * 0.04
Ginger = Vinegar * 0.02
Mustard seeds =

Instructions:

Put all the ingredients into a large saucepan. Bring to boil, then simmer on low heat for 45 minutes, stirring throughout.
Once ready, put into jars to preserve.
