Marrow Caviar

Yield: 1L of marrow caviar – make in giant 10L stove top pot.


Vegetable oil – 70g
White Onions (chopped small) – 300g
Carrots (grated) – 250g
Tomato Paste concentrate – 80g
Marrow (peeled and chopped into cubes) – 1kg
Salt – 1tsp
Sugar – 1tbsp
Black pepper – 1/4tsp
9% Vinegar – 1tbsp


Heat the vegetable oil in the pan, fry the white onions, add the carrots, add the tomato paste. Add marrow, salt, sugar and black pepper, stir thoroughly and simmer on low heat with the lid on until the marrow is softened. Stirr every 10 mins to prevent it sticking to the bottom of the pan. Once cooked stirr in the vinegar.

Puree using a stick blender, and put into prepared jars.
