Moscow Cake

Ingredients:

You will need the following twice over to make 4 layers of sponge.

Egg whites (from a carton) – 133g
Egg white (from 1 egg) – 1
Sugar – 5tbsp
Egg yolk (from 1 egg) – 1
Flour – 1tbsp
Wallnuts (ground) – 100g

Sour cherries
Pineapple
Almond Flakes

Instructions:

Preheat oven to 200 C Fan

Whisk the egg whites and sugar until stiff peaks. Fold in the yolk, flour and ground wallnuts.

Spread thinly onto a lined baking tray (20x30cm).

Bake for 14 mins

Repeat to make a second sponge.

Cut each layer in half to create 4 layers of sponge.
