Red & White Currant Sorbet

Red Currants (with stalks) – 300g
White Currants (with stalks)- 300g
Sugar – 250g
Orange Zest – from 1 orange
Orange Juice – 4tbsp
Orange Liqueur – 4tbsp


Put the currants, sugar, orange zest and juice into a bowl and leave in the fridge for at least 12 hours.

Puree the mixture and then strain using a cheese cloth or muslin. Add in the orange liqueur.

Pour into an ice-cream making machine following the machine instructions.
