Roman cheese spread by Virgil

The Romans called this “moretum“, which can be translated as a salad or a cheese and garlic spread. This one is based on Virgil’s poem about the agricola Symilus.

Obviously this recipe isn’t “accurate” to the Romans. I have used the poem as inspiration. Read the poem here.

Ingredients

Soft goats cheese – 150g
Garlic cloves (crushed)- 2 (or 1?)
Parsley (chopped) – 2 sprigs
Ground coriander – 1/2tsp          
White wine vinegar – 1/4tsp
Olive oil – 2tbsp

Instructions

Put all the ingredients into a food processor and blend until smooth.

Decorate with a sprinkle of coriander and fresh parsley leaves.
