A spicy tomato sauce. Use with penne or fusilli pasta. Also goes well with spinach and ricotta ravioli.
Olive oil – 2tbsp
Garlic cloves (minced) – 2
Canned chopped tomatoes – 1 tin (400g)
Lazy chilli – 1/2 tsp
Concentrated tomato paste – 2 tbsp
Wine – optional
Black pepper – to taste
Pour the olive oil into a saucepan. Add the garlic cloves. When the garlic starts to smell, add the tomatoes, chilli, tomato paste and wine (if using). Season with black pepper and simmer until the sauce thickens and the liquid evaporates.
