The point of this jam is to keep the berries beautiful and whole.
Ingredients as a measure
Sugar = 400g
Berry = 1Kg
Water = 167g (+ 100g Sugar)
Ingredients as a percentage
Jam = 100%
Sugar = 25%
Berry = 60%
Water = 10% (+ 5% sugar)
Method
Make a sugar syrup using the water + sugar. Bring to boil, and add 1/3 of the berries, when almost boiling, add another 1/3 of berries, and again when almost boiling add the remaining 1/3 of berries. Once again, when almost boiling pour in the sugar and mix gently. Take off heat. The jam is ready.
