Red Currant Relish

Ingredients as a measure

Red onion – 1000g
Red currant – 500g
Vinegar – 250ml
Sugar – 250g
Salt – 1.5tsp
Mustard Seed – 1.5tsp
Ginger – 2tsp
Cinnamon – 2tsp
Garlic powder – 1/2tsp

Ingredients as a proportion

Red Onion = X
Red currant = X/2
Vinegar = X/4
Sugar = X/4
Salt = X*0.0015
Mustard Seed = X*0.0015
Ginger = X*0.002
Cinnamon – X*0.002
Garlic powder =X*0.0005


Put all the ingredients into a large saucepan. Bring to boil, then simmer on low heat for 45 minutes, stirring throughout.
Once ready, put into jars to preserve.
