A classic style tomato based sauce, perfect with chicken. Serve with baked sweet potato and sprouting broccoli.
Onion – 1
Carrot – 1
Celery – 2
Garlic cloves (minced) – 2
Canned chopped tomatoes – 1 tin (400g)
Concentrated tomato paste – 1tbsp
Wine – 50ml
Salt and pepper
Roasted red pepper – 1
Meat – optional
Chop the onion, carrot, celery and garlic into really small cubes. Fry in a saucepan for about 5 minutes, then add in the canned tomatoes, tomato paste, wine and salt and pepper. Simmer until sauce thickens and liquid evaporates. Chop the roasted rep pepper and mix in.
Cook meat separately if using. Add the cooking juices to the sauce and simmer until liquid evaporates.
