Perfect Scones

Flour – 225g
Salt – pinch
Bicarbonate of Soda – 1/2tsp
Cream of tartar – 1tsp
Butter – 30g
Sugar – 50g
Egg – 1
Milk – 80ml
Yohurt – 80g
Vanilla – 2tsp

Pre-heat oven to 200 fan.

Blitz flour, salt, bicarbonate of soda, cream of tartar and cold butter in a chopper.
Mix sugar, egg, milk, yoghurt and vanilla in a jug.

Keep some liquid aside for brushing. Pour the rest of the liquid into the dry ingredients and gently incorporate together. Do not over mix, the mixture will be wet and sticky,

Flatten mixture on silicone baking mat and use 7cm biscuit cutter to form 6 scones. Brush with leftover liquid.

Bake for 15 mins
