Swiss Roll

Decoration ingredients:

Butter – 50g
Icing sugar – 50g
Egg white – 1
Flour – 50g
Food colouring

Mix all. Tape a pattern onto the baking sheet. Spread the decorating paste onto the baking sheet, then take the tape off. Put the baking sheet into the freezer.

Cake part 1 ingredients:

Egg yolks – 3
Lemon extract – just over 1/2tsp (or zest of 1 lemon)
Vanilla extract- 1/4tsp
Milk – 35g
Vegetable oil – 25g
Flour – 50g
Baking powder – 1/8 tsp

Mix all.

Cake part 2 ingredients:

Egg whites – 3
Sugar – 75
Cream of tartar – 1/8tsp

Preheat the oven to 160 Degrees Celsius Fan.

Whisk the egg whites in a stand mixer adding in the sugar gradually until stiff peaks.

Mix part 1 with part 2 by folding together.

Bake at 160 Degrees Celsius Fan for 25mins.

Once baked, remove from mould, sandwich between clingfilm and a clean towel, and roll into shape while still hot. Once it is cool, unroll and add filling (whipped cream and jam).
